Tortillas filled with smoky chipotle chicken tinga and melted cheese, griddled to perfection. These protein-packed quesadillas make a quick, flavorful family lunch or dinner option.
Heat 2 tbsp olive oil in a large skillet over medium-high heat. Add sliced onion and sauté until softened, about 3-4 minutes.
Add minced garlic and sauté briefly, then stir in chopped tomato, chipotle peppers in adobo, oregano, salt, and black pepper. Cook for 5 minutes until tomatoes break down and the mixture is fragrant.
Add shredded chicken breast to the skillet and toss well to coat with the tinga sauce. Simmer on medium-low for 5-7 minutes to allow the flavors to meld. Remove from heat.
Heat a clean, dry skillet or griddle over medium heat. Place a corn tortilla on the skillet, sprinkle with a layer of Monterey Jack cheese, then spoon a generous portion of chicken tinga mixture, and top with more cheese. Place a second tortilla on top.
