Trim and peel the bamboo shoots, then slice them into thin matchsticks for even, snappy texture.
Heat a wok or large skillet over medium-high flame; when hot, add the vegetable oil, swirling to coat the surface evenly.
Add the sliced bamboo shoots and stir-fry for 3–4 minutes, stirring continuously so the pieces sear but do not brown.
Add green onion, soy sauce, salt, and white pepper; toss briskly for 1–2 minutes until the bamboo shoots are glossy but still crisp.
