Heat the vegetable oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 10–15 seconds to flavor the oil.
Add chopped onions and sauté until golden brown, stirring frequently for even caramelization, about 4–5 minutes.
Mix in ginger-garlic paste and green chili, cooking for an additional 1–2 minutes until the aroma mellows.
Add diced tomatoes, turmeric, ground coriander, red chili powder, and salt. Cook on medium-low heat until tomatoes soften and oil starts separating from the masala (about 5 minutes).
Stir in the diced doodhi (bottle gourd) and mix well with the masala. Cover and cook on low heat for 10 minutes, stirring occasionally to prevent sticking.
Add the cooked chickpeas, half a cup of water, and stir thoroughly. Continue to cook covered over low heat for another 7–8 minutes until doodhi is tender and flavors are combined.
Uncover, sprinkle garam masala, and simmer uncovered for 2 minutes to allow any excess moisture to evaporate and develop the flavors.
Turn off the heat. Stir in lemon juice and chopped cilantro just before serving for a fresh tangy finish.
