Tender sliced beef and crisp fresh snow peas come together in a light ginger-soy sauce. This clean eats stir-fry is high protein, low calorie, and perfect for a 1200 calorie or weight loss plan.
Slice flank steak thinly across the grain; toss with 1 tsp soy sauce and 1.5 tsp cornstarch. Let marinate for 10 minutes.
Trim snow peas, slice scallions, mince garlic and ginger. Prepare all vegetables before heating your pan.
Heat a large nonstick skillet or wok over high heat. Add 1 tsp sesame oil, then add beef in a single layer. Stir-fry 1–2 minutes until just browned—do not overcook. Remove from pan.
Add garlic and ginger to pan, stir-fry for 30 seconds, then add snow peas and scallions. Toss quickly, keeping heat high for crisp texture.
Return beef to the pan; add remaining soy sauce and black pepper. Stir-fry everything for 1–2 minutes more, until snow peas are bright and beef is just cooked. Serve immediately.
