Spicy braised duck neck is a flavorful, protein-rich Chinese snack. A carnivore-friendly, family treat with bold, aromatic braising spices.
Rinse the duck necks thoroughly under cold water and pat dry with paper towels.
In a large pot over medium-high heat, add the duck necks and cover with cold water. Bring to a boil, skim off any foam, and drain. Rinse the necks to remove impurities.
Heat a clean, heavy-bottomed pot over medium heat. Add onion, ginger, garlic, scallions, star anise, dried chilies, and Sichuan peppercorns. Stir-fry for 2–3 minutes until aromatic.
Return the blanched duck necks to the pot and add soy sauce, Shaoxing wine, sugar, five-spice powder, and water. Bring to a boil over high heat, then immediately reduce to low and cover.
Simmer gently on low for 80–90 minutes, turning the necks every 20 minutes for even braising. Uncover during the last 10 minutes to allow the liquid to reduce, intensifying flavor. Remove from heat and let cool slightly before serving.
