Savory pumpkin tart with nutmeg and Parmigiano captures autumn in a golden crust. This vegetarian mediterranean pie is fresh, healthy, and makes a wonderful family dinner.
Preheat your oven to 375°F and set a rack in the center.
Peel and cut the pumpkin into small cubes, then sauté with olive oil and chopped onion over medium heat for 10–12 minutes until soft but not mushy. Allow to cool slightly.
In a large bowl, beat the eggs; stir in ricotta, Parmigiano Reggiano, nutmeg, salt, and pepper until completely blended.
Fold the sautéed pumpkin mixture into the egg and cheese mixture, mixing until evenly combined.
Gently fit the pie crust into a 9-inch tart pan. Evenly spread the filling onto the crust, smoothing the top.
Bake for 35–40 minutes until golden and set in the center. Let the tart rest in the pan for 10 minutes before slicing and serving warm.
