Shredded pork braised and fried in a rich chile ancho and cumin sauce from Sinaloa. This high protein, carnivore-approved filling is freezer-friendly and perfect for family burritos and tacos.
Soak the dried ancho chiles in hot water for 20 minutes, then remove stems and seeds. Blend chiles with onion, garlic, cumin, oregano, vinegar, and 1/2 cup of water until smooth.
Cut the pork shoulder into large chunks. Season with salt and pepper. Heat 1 tbsp vegetable oil in a Dutch oven over medium-high heat, sear pork on all sides until browned (about 6 minutes).
Pour the blended chile mixture over the seared pork. Add remaining oil. Cover, reduce heat to low, and braise for 2–2.5 hours until pork is fork-tender.
Remove pork from sauce, shred with two forks. Return pulled pork to the pot, mix with sauce. Simmer uncovered on medium heat for 15 minutes, stirring to prevent sticking and allow excess moisture to cook off.
Finish by frying the shredded pork in a nonstick skillet with 1 tbsp oil over medium-high heat for 5 minutes, stirring often until slightly crispy edges develop. Serve warm.
