Ellu Sadam is a flavorful Indian rice dish with aromatic spices and a distinct regional character. This vegetarian preparation is a versatile family side dish that pairs well with curries and raita.
Dry roast the black sesame seeds in a skillet over medium heat until they start to pop and become aromatic. Remove from heat and set aside to cool completely.
In the same pan, dry roast peanuts, chana dal, and urad dal separately on medium-low heat until golden and fragrant. Allow to cool.
Coarsely grind the roasted sesame seeds, peanuts, chana dal, and urad dal together. Take care not to overgrind—texture matters for the final dish.
Heat vegetable oil in a large skillet on medium flame. Add mustard seeds and let them splutter, then add dried red chilies, curry leaves, and a pinch of asafoetida. Saute for 30 seconds until the spices release their aroma.
Add the ground spice and seed mix to the pan, saute for 1 minute, then tip in the cooked rice. Sprinkle with salt and gently mix to evenly combine, taking care not to mash the grains. Serve warm or at room temperature.
