Italian bean soup is a humble vegetarian dish that nourishes families for pennies. This mediterranean classic is high in protein and fiber, ideal for a healthy 1200 calorie or weight loss plan.
Heat 2 tbsp olive oil in a large pot over medium heat. Add onions, celery, and carrot. Sauté for 8–10 minutes, stirring occasionally, until the veggies are soft and the onions are translucent.
Stir in the minced garlic, chopped rosemary, and thyme. Cook for 1 minute until fragrant.
Add the cannellini beans and pour in the vegetable broth. Raise heat to high and bring the soup to a gentle boil.
Reduce heat to low, cover, and simmer for 25–30 minutes, stirring once or twice to prevent sticking.
Tear the bread slices into rustic chunks and stir them into the soup. Continue to simmer uncovered for 5 minutes, letting the bread thicken the soup slightly.
Turn off the heat, season with salt and black pepper to taste, then drizzle the remaining olive oil over the soup before serving.
