Heat olive oil in a large skillet over medium-high heat. Season the chicken breasts on both sides with salt and black pepper, then sear each side for about 3-4 minutes until golden. Remove the chicken and set aside.
Reduce the heat to medium. In the same skillet, add chopped onion and sauté for 3 minutes until softened, stirring frequently. Add minced garlic and cook for 1 additional minute until fragrant.
