Slice carrot into thin matchsticks, chop green onion, and cube the firm tofu into 1-inch pieces.
Heat 1 tbsp of sesame oil over medium-high heat in a large nonstick skillet or wok until shimmering, but not smoking.
Add garlic and carrot, stir-frying for about 1 minute to release aroma and begin softening the carrot.
Add cubed tofu and cook undisturbed for 2 minutes, then gently stir to brown lightly on all sides.
