Soft tortillas soaked in fresh tomato sauce and filled with crumbled cheese. This vegetarian dish is a healthy, lighter option for family dinners with bright, fresh tomato flavors.
Heat 1 tbsp olive oil in a skillet over medium heat. Add chopped onion and cook for 2-3 minutes until softened but not browned.
Add tomatoes (quartered) and garlic. Sauté for another 3-4 minutes, stirring, until tomatoes start releasing their juices.
Transfer the mixture to a blender, add salt and black pepper, and blend until smooth. Pour the sauce back into the skillet, simmer on low heat for 7-8 minutes, stirring occasionally.
In a separate pan, lightly brush tortillas with remaining olive oil. Warm each tortilla over medium heat for 30 seconds on each side to soften.
Dip each tortilla in the hot tomato sauce, then fill with crumbled queso fresco. Fold in half and plate. Spoon more sauce on top and garnish with fresh cilantro before serving.
