Vibrant beetroot risotto is as stunning to look at as it is to eat. This vegetarian mediterranean dish is fresh, naturally sweet, and a healthy family dinner rich in folate and antioxidants.
Warm the vegetable stock in a saucepan and keep at a gentle simmer on low heat throughout the cooking process.
In a large skillet or Dutch oven, heat the olive oil over medium heat. Add finely chopped onion and sauté for 4–5 minutes until soft, adjusting the heat to prevent browning.
Add the Arborio rice and stir constantly for 1–2 minutes so the grains are glossy and lightly toasted, ensuring even coating with oil.
Puree the cooked beetroot until smooth, then stir it into the rice along with half the salt. Mix well and begin adding hot stock one ladle at a time, stirring frequently and letting most of the liquid absorb before each addition.
Continue adding stock and stirring for about 18–20 minutes until the rice is creamy but retains a subtle bite. In the final 3 minutes, fold in the spinach gently so it wilts without turning mushy.
When the risotto has reached a creamy, slightly loose consistency, remove from the heat and stir in the Parmesan. Season with black pepper and additional salt to taste. Serve immediately, garnished with more Parmesan if desired.
