Beef or pork bone marrow is slow-simmered for hours into a deeply nourishing, collagen-rich broth. This protein-packed family soup base supports intermittent fasting, bariatric eating, and overall wellness.
Preheat oven to 425°F. Place beef marrow bones on a rimmed baking sheet and roast for 25 minutes until deeply browned.
Transfer the roasted bones to a large stockpot. Add onion, celery, carrot, and 10 cups of water.
Stir in apple cider vinegar and let the mixture sit for 30 minutes to draw out minerals before heating.
Bring the pot to a gentle simmer over medium-low heat, then reduce to low, skimming off any foam or impurities during the first hour.
Add black peppercorns, bay leaves, and salt. Simmer uncovered for 6–8 hours, keeping the temperature just below a bubble for maximum clarity.
Strain the broth through a fine-mesh sieve, discarding solids and bones. Let cool slightly, then chill to remove hardened fat if desired before serving.
