Eggs simmered in spicy tomato sauce with Parmesan grated on top. Italian, fiery, low carb — this breakfast has personality.
Heat 2 tbsp olive oil in a large nonstick skillet over medium heat until shimmering.
Add the chopped onions and sauté for 3–4 minutes, stirring occasionally, until translucent. Add minced garlic and cook for 1 minute, being careful not to let it brown.
Stir in crushed tomatoes, red pepper flakes, dried oregano, salt, and black pepper. Simmer at medium-low heat for 10 minutes, stirring occasionally, until thickened and fragrant.
Make 4 gentle wells in the sauce using a spoon. Crack 1 egg into each well; cover the skillet with a lid and reduce heat to low.
Simmer for 5–7 minutes, or until egg whites are just set and yolks remain runny. Remove from heat, sprinkle grated Parmesan and fresh basil over the top, and serve immediately.
