Misal pav is a fiery Maharashtrian dish of sprouted moth beans curry topped with farsan and served with bread. This high protein, fiber-rich vegetarian dish supports weight loss and is a family breakfast favorite.
Heat 3 tbsp oil in a large pot over medium heat; add mustard seeds and cumin seeds, letting them splutter for 30 seconds.
Add finely chopped onions, sauté for 4–5 minutes until golden, then add minced garlic and ginger; cook for another 1 minute to release aroma.
Stir in chopped tomatoes, turmeric, red chili powder, and goda or garam masala; cook on medium until oil visibly separates from the mixture.
Add diced potato and sprouted moth beans, mix well, sprinkle with salt, and cover with 3 cups water. Bring to a boil, then simmer on low for 30–35 minutes, stirring occasionally.
Taste and adjust salt or spices, mash a portion of the beans for a thicker curry if preferred. Serve hot misal in bowls, topped with farsan, chopped onions, cilantro, and a squeeze of lemon. Warm pav buns in a skillet before serving alongside.
