Pyaz Pakora is a beloved Indian snack with crispy texture and bold, aromatic spicing. This popular vegetarian treat is a family tea-time favorite and a staple at celebrations and gatherings.
In a large bowl, combine the sliced onions with salt and set aside for 10 minutes to draw out moisture.
Add chickpea flour, rice flour, chopped cilantro, green chili, red chili powder, ground cumin, carom seeds, and turmeric to the onions. Mix thoroughly.
Gradually add water until the mixture forms a thick, sticky batter that coats the onions evenly. Avoid adding too much water—mix just until combined.
Heat vegetable oil in a deep pan over medium-high heat (about 350°F). Test by dropping in a small bit of batter; it should sizzle immediately.
Drop spoonfuls of batter into the hot oil without overcrowding. Fry, turning occasionally, for 4–6 minutes until pakoras are golden and crispy. Drain on paper towels before serving.
