Pyaz Paratha is a flaky, stuffed Indian flatbread that's pan-fried to golden perfection with butter or ghee. This hearty vegetarian bread is a satisfying family breakfast or dinner accompaniment.
Combine whole wheat flour and 0.5 tsp salt in a mixing bowl. Gradually add water while kneading to form a smooth, soft dough. Cover and rest for 15 minutes.
In a separate bowl, mix chopped onion, green chili, cilantro, cumin seeds, red chili powder, garam masala, and the remaining salt. Pat excess liquid from the onion mixture using a clean towel for optimal texture.
Divide the dough into 4 equal portions. Flatten one portion into a disc, place 2–3 tbsp onion mixture in the center, and gather edges to seal. Gently flatten and roll into a 6-inch round. Repeat with remaining dough.
Preheat a skillet or tawa over medium heat. Place one paratha on the hot skillet; cook for 1–2 minutes until faint golden spots appear, then flip. Brush cooked side with 1/2 tbsp ghee or butter.
Cook reverse side for another 1–2 minutes, pressing gently to ensure even browning. Flip again and brush with more ghee. Continue for 1 more minute on medium-low heat, adjusting heat as needed to avoid burning while ensuring crispness. Repeat for all parathas.
Serve Pyaz Parathas hot with a side of yogurt, pickle, or vegetable curry as desired.
