Delicate mini crystal zongzi with translucent tapioca skin are a beautiful, modern treat. A family dessert with fresh, colorful fruit fillings.
Prepare filling: Dice assorted fresh fruit into small pieces for even distribution, then set aside.
Make crystal skin: In a saucepan, whisk tapioca starch with 3 cups water, granulated sugar, and salt until smooth. Heat over medium, stirring constantly. When mixture thickens and turns translucent, quickly remove from heat.
Shape the zongzi: While the dough is still hot and pliable, spoon 2 tablespoons onto a banana leaf (or parchment), gently spread into a thin rectangle. Place some diced fruit in the center.
Wrap & seal: Fold the dough over the fruit to enclose, forming a small triangle or rectangle. Carefully wrap with banana leaf or parchment, folding edges tightly. Repeat with remaining ingredients.
Steam: Arrange wrapped zongzi in a steamer. Steam over medium-high heat for 12–15 minutes until the skins are glossy and fully translucent. Cool slightly before serving for best texture.
