Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
Slice each zucchini in half lengthwise and scoop out the flesh, leaving a 1/4-inch border. Set the flesh aside and lightly brush the zucchini shells with olive oil.
Finely chop the reserved zucchini flesh. In a bowl, combine it with breadcrumbs, Parmesan, mozzarella, parsley, basil, minced garlic, olive oil, salt, and black pepper until evenly mixed.
Fill the zucchini shells with the prepared stuffing, pressing gently to shape and ensure even coverage. Place stuffed zucchinis on the baking sheet.
