Lachha Paratha is a flaky, stuffed Indian flatbread that's pan-fried to golden perfection with butter or ghee. This hearty vegetarian bread is a satisfying family breakfast or dinner accompaniment.
In a large bowl, combine all-purpose flour, whole wheat flour, and salt, then add water gradually and knead for 6–8 minutes until a smooth, soft dough forms.
Cover the dough with a damp cloth and let it rest for at least 20 minutes to allow moisture to evenly distribute.
Divide the dough into 4 equal balls. Roll each ball into a thin disc (about 7 inches diameter), brush with melted ghee, and then dust lightly with flour.
Fold the disc accordion-style into pleats, coil into a spiral, press gently, and roll out again to a 6-inch round, ensuring layers aren’t pressed too hard and remain visible.
Heat a skillet over medium-high heat. Place one paratha on the hot skillet, cook until golden spots appear, flip, and brush with oil or ghee; repeat on both sides, 1–2 minutes each, until fully cooked and crisp on the edges.
Stack cooked parathas, gently crush between palms to reveal layers, and serve hot.
