Place the poha in a large bowl and sprinkle with a few tablespoons of water, tossing gently with your hand until evenly moistened, then let rest for 8 minutes to soften.
While poha rests, heat vegetable oil in a small pan over medium heat. Add mustard seeds and let them splutter. Immediately add curry leaves and sauté for 30 seconds, turning off the heat to prevent burning.
In the bowl with the softened poha, add chopped onion, tomato, grated coconut, roasted peanuts, chopped green chili, and salt and sugar. Mix thoroughly with a spoon.
Pour the tempered oil with mustard seeds and curry leaves over the poha mixture. Add lemon juice and chopped cilantro, then fold gently to combine, ensuring every ingredient is evenly coated.
Taste and adjust lemon juice or salt if needed. Serve immediately for best texture, as the poha should be soft but not mushy.
