In a large mixing bowl, combine besan, whole wheat flour, chopped onion, green chili, cilantro, cumin seeds, carom seeds, turmeric, red chili powder, and salt.
Gradually add water, mixing with your fingers to form a soft, cohesive dough; knead for 2-3 minutes until pliable and smooth.
Divide the dough into 8 equal balls, cover with a damp cloth, and rest for 10 minutes to hydrate the flours.
Dust a rolling surface with a little flour and roll each dough ball into a 6-inch disc, taking care not to press too hard to avoid cracking.
Heat a non-stick tawa or skillet over medium heat; once hot, cook a roti for 1-2 minutes until small bubbles appear, then flip and brush lightly with oil, cooking another 1-2 minutes until golden brown spots develop.
Repeat with remaining dough balls, controlling the heat to prevent burning and ensuring the rotis are golden and cooked through.
