Davangere Benne Dosa is a crispy South Indian crepe made from fermented rice and lentil batter, served with chutney and sambhar. This popular vegetarian dish is naturally high in protein from fermentation and a beloved family breakfast.
Rinse rice, urad dal, and poha separately, then soak them all for at least 4 hours.
Drain soaked ingredients, then grind them with fresh water into a smooth batter. Make sure the batter is slightly thick and lump-free.
Transfer batter to a bowl, add salt, cover, and ferment in a warm spot overnight (8–10 hours) until airy bubbles form.
Heat a cast iron or nonstick dosa pan on medium-high. Lightly grease with oil, then pour about 1/2 cup batter and spread gently in a circular motion.
Drop 1 tbsp unsalted butter over each dosa as it cooks. Let it crisp up until golden brown edges form, then loosen and fold; serve hot with chutney and sambhar.
