Baingan bharta is a smoky, fire-roasted eggplant mash with onions, tomatoes, and spices. This healthy, low-calorie vegetarian dish is naturally keto-friendly and excellent for weight loss and DASH diets.
Prick the eggplants with a fork and roast them directly over an open flame or under a broiler on high heat, turning occasionally until skins are charred and flesh is soft, about 15-20 minutes.
Transfer roasted eggplants to a bowl, cover and let them steam for 5 minutes, then peel off the charred skin and mash the flesh well.
Heat olive oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
Add chopped onions, sauté on medium-high heat until golden, then add minced garlic and ginger, cooking for 1 more minute for full aroma.
Stir in chopped tomatoes, turmeric, ground coriander, red chili powder, and salt. Cook on medium heat until tomatoes are soft and oil separates, about 6-8 minutes.
Add the mashed eggplant, mix thoroughly, and cook uncovered on medium heat for 5-7 minutes until moisture reduces and flavors meld.
Turn off the heat, fold in chopped cilantro, adjust seasoning if needed, and let rest for 2-3 minutes before serving.
