Sieve the chickpea flour thoroughly for a lump-free base; set aside.
Heat the ghee in a deep heavy-bottomed pan on low-medium and keep warm but not bubbling.
In a separate thick saucepan, combine sugar and water; bring to a boil over medium heat, stirring constantly until a one-string syrup forms.
Reduce the syrup heat to low, then gradually add the sieved chickpea flour, stirring briskly to avoid lumps.
Immediately start adding warmed ghee in batches, stirring continuously so the mixture remains smooth and glossy.
Once the mixture begins to leave the sides and froths, pour it quickly into a greased tray; gently level with a spatula.
Let cool for 30–40 minutes before cutting into squares; allow the Mysore Pak to set fully for ideal texture.
