Warm, frothy egg yolk custard whisked with Marsala wine is Italian indulgence in a glass. This classic mediterranean dessert is a traditional family treat.
Set up a double boiler: Pour 1–2 inches of water in a saucepan and bring to a gentle simmer over medium-low heat. Ensure the bowl for mixing does not touch the water.
In a large heatproof bowl, vigorously whisk together the egg yolks and sugar until the mixture is thick, pale, and ribbons form—about 2–3 minutes.
Add the Marsala wine slowly, whisking constantly to prevent curdling, then stir in vanilla extract and lemon zest for brightness.
Place the bowl over the simmering water, reduce heat if needed, and whisk continuously (do not stop!) for 8–10 minutes. Scrape the sides periodically to avoid sticking or overcooking at the base.
Continue whisking until the mixture triples in volume, becomes light, airy, and forms soft peaks. Remove from heat immediately to prevent scrambling. Serve warm in glasses, optionally garnished with extra zest.
