Sizzling chicken with peppers, onions, bacon, and melted cheese is a colorful taquería classic. This chicken, high protein dish is a fresh, family-friendly option ideal for healthy, satisfying meals.
Preheat a large skillet over medium heat and add the olive oil.
Cook the bacon slices until crisp; remove, drain on paper towels, and chop. Leave about 1 tsp bacon fat in the pan.
Increase heat to medium-high. Add chicken breast pieces (cut into 1-inch cubes), sprinkle with salt, pepper, cumin, and smoked paprika, and sauté for 5-6 minutes until golden and just cooked through. Remove chicken to a plate.
In the same skillet, add diced peppers and onions. Sauté on medium-high heat for 4-5 minutes until veggies are softened with light browning.
Return cooked chicken and chopped bacon to the pan. Toss everything together, arrange in an even layer, and sprinkle shredded Monterey Jack cheese on top. Cover the pan and let sit off-heat for 2-3 minutes to melt the cheese.
Serve hot, ideally with warmed tortillas or as a protein-rich main.
