Tuscan bread salad with tomatoes, cucumbers, and red onion tossed in olive oil. This vegetarian mediterranean salad is a fresh, healthy family dish ideal for summer, clean eats, or a calorie deficit.
Preheat oven to 375°F. Spread the bread cubes on a baking sheet and toast for 10–12 minutes, stirring halfway, until dry and golden.
In a large mixing bowl, combine the diced tomatoes, chopped cucumbers, and sliced red onion. Toss gently to mix.
Add the toasted bread cubes to the vegetables, ensuring the bread is evenly distributed.
Drizzle the olive oil and red wine vinegar over the salad. Sprinkle with salt and black pepper. Toss thoroughly for 60 seconds, ensuring all bread cubes absorb some moisture.
Add torn fresh basil and toss again. Let the salad stand for at least 20 minutes to allow flavors to meld and bread to soften, but not get mushy. Serve at room temperature.
