Silky liangpi cold skin noodles in a tangy, spicy dressing are a beloved summer staple. A vegetarian, fresh dish ideal for healthy, calorie deficit meals.
Rinse the bean sprouts under cool water. Bring a medium pot of water to a rolling boil, blanch the bean sprouts for 45 seconds, then drain and cool immediately in icy water.
Slice the cucumber into fine julienne strips for crisp texture and set aside. Finely chop cilantro leaves.
In a small bowl, mix together soy sauce, Chinese black vinegar, chili oil, minced garlic, sugar, sesame oil, and salt until the sugar is dissolved.
Boil or steam the liangpi noodles briefly (1–2 minutes) if packaged; if fresh, just separate gently in cold water. Drain the noodles thoroughly to remove excess moisture.
To assemble, divide noodles into serving bowls. Top with cucumber, bean sprouts, and cilantro. Drizzle the prepared dressing over each portion right before serving. Toss well and serve chilled.
