Aloo Gobhi Matar is a wholesome Indian vegetable dish cooked with traditional spices and fresh ingredients. This healthy vegetarian preparation is a family staple that supports clean eats and balanced nutrition.
Heat the vegetable oil in a large skillet over medium heat. Add cumin seeds and let them sizzle for 30 seconds until fragrant.
Add chopped onion and sauté on medium heat for about 4 minutes until soft and lightly golden, stirring to prevent browning.
Mix in the tomatoes and all ground spices (coriander, turmeric, ground cumin, garam masala, and red chili powder). Cook for 3-4 minutes until the tomatoes break down and the oil starts to separate.
Add the diced potatoes and cauliflower florets. Stir well to coat the vegetables with the spices. Cover and cook on low-medium heat for 7 minutes, stirring occasionally to prevent sticking.
Uncover and add green peas and salt. Stir, cover again, and let it cook for another 10 minutes on low, or until the potatoes and cauliflower are tender, but not mushy. Remove lid and cook uncovered for 2 more minutes to evaporate excess moisture if needed.
