Sandy Chinese almond cookies with a tender, crumbly texture are a classic festive treat. A family recipe with fresh, nutty almond flavor.
Preheat oven to 325°F (160°C). Line a baking sheet with parchment paper for even baking.
In a large bowl, combine all-purpose flour, almond flour, salt, and baking powder, whisking thoroughly to remove lumps.
In another bowl, cream butter and granulated sugar until light and fluffy, then blend in egg yolks one at a time for a smooth texture.
Mix in vanilla and almond extracts, then gently fold in the dry ingredients in thirds; avoid overmixing to preserve crumbly texture.
Scoop 1-tbsp portions, shape into small balls, and place on baking sheet with 2-inch spacing. Press a whole almond gently into each dough ball.
Bake for 18–22 minutes on the center rack, checking at 15 minutes—cookies should be lightly golden around the edges only.
Cool on the sheet for 5 minutes before transferring to a wire rack to finish cooling; handle gently as cookies are very tender.
