Rinse the dried lima beans and soak them in water for at least 6 hours or overnight for best texture.
Drain soaked beans and set aside. In a large heavy pot over medium heat, combine the smoked ham hock, 7 cups water, and bay leaf. Bring to a gentle simmer.
Skim off any foam, then add chopped onion, celery, and carrot to the pot. Maintain a gentle simmer; do not boil, to prevent toughening the meats and beans.
Add the drained beans to the pot. Cover partially and simmer on low for 2 to 2.5 hours, stirring occasionally and ensuring beans remain submerged.
Remove ham hock, shred the meat from the bone, and discard bone and skin. Return shredded meat to the pot, season with salt and black pepper, and simmer uncovered for another 20-30 minutes until broth thickens to a creamy consistency.
