Plump shrimp are simmered in creamy rice porridge with ginger and a splash of sesame oil. This high protein, low calorie family congee is a comforting and healthy breakfast or light dinner.
Rinse the jasmine rice under cold running water until the water runs mostly clear, then drain well.
In a heavy-bottomed pot, combine the rinsed rice, 6 cups of water, and sliced ginger. Bring to a boil over high heat, then reduce heat to low.
Simmer uncovered for 40 minutes, stirring every 10 minutes to prevent sticking and to develop the creamy congee texture.
Season the congee base with salt and white pepper. Continue simmering for another 10 minutes until the rice is fully broken down and creamy.
Add the shrimp and stir gently. Cook for 3–5 minutes on low heat, until the shrimp just turn pink and are cooked through. Remove from heat, drizzle with sesame oil, and top with sliced scallions before serving.
