Tender fava beans simmered with onion and olive oil are a springtime Italian treat. This vegetarian mediterranean side dish is fresh, high protein, and perfect for healthy family meals.
Peel and finely dice the yellow onion; chop fresh parsley and set aside.
In a large sauté pan, heat 3 tbsp olive oil over medium heat until shimmering but not smoking.
Add the diced onion and cook gently for 6–8 minutes, stirring occasionally, until translucent and beginning to soften without browning.
Add the shelled fava beans to the pan. Stir well to coat in oil and onion, then season with kosher salt and black pepper.
Pour in 1 cup water and bring to a gentle simmer. Reduce heat to low, cover the pan, and cook for 20–25 minutes, stirring occasionally, until fava beans are fork-tender and most liquid is absorbed.
Uncover, increase heat to medium, and cook for 2–3 more minutes to allow any excess liquid to evaporate, adjusting seasoning if needed.
Sprinkle with chopped parsley, toss gently, and serve warm as a side dish or light main.
