Heat the olive oil in a large skillet over medium-high heat until shimmering. Add chicken thighs and sear for 3–4 minutes per side until golden brown, then transfer to a plate.
Reduce heat to medium. Add chopped onion and bell peppers to the pan, sauté for 6–8 minutes until softened. Stir in minced garlic and cook for another minute.
Add diced plum tomatoes and dried oregano to the vegetables. Stir, cooking for 4–5 minutes until tomatoes release their juices.
Return the seared chicken to the pan. Pour in white wine, then season with salt and black pepper. Bring to a simmer and cover. Lower heat to medium-low and braise for 25–30 minutes, stirring occasionally.
Uncover, increase heat to medium-high for 3–5 minutes to reduce the sauce if needed. Sprinkle fresh basil on top just before serving for color and flavor.
