Dice the chicken breast into bite-sized pieces; set aside. Prep vegetables by finely chopping carrots and slicing green onion.
Heat 1 tbsp vegetable oil in a wok over medium-high heat. Add chicken and stir-fry for 2–3 minutes until golden and cooked through. Remove chicken and set aside.
Add remaining oil to the wok. Crack eggs in, scramble quickly until just set, then immediately add carrots and peas. Stir-fry for 1 minute, keeping heat at medium-high.
Stir in cooked rice, breaking up any clumps. Return chicken to the wok. Add soy sauce, sesame oil, and black pepper. Toss everything vigorously for 2 minutes to heat evenly.
Add green onion last. Stir-fry for 30 seconds, then remove from heat. Serve promptly to preserve texture and moisture.
