Simple yet deeply flavorful, Whole Masoor Dal is a classic Indian lentil dish loaded with plant-based protein and fiber. This vegetarian staple supports DASH diet, lower cholesterol, and wholesome family eating.
Rinse masoor dal thoroughly in cold water until the water runs clear; drain well.
In a large pot, add soaked dal and 4 cups of water. Bring to a boil over medium-high heat, then reduce to a gentle simmer. Skim off any foam and cook uncovered for 25–30 minutes until dal is tender but holding shape.
Meanwhile, heat vegetable oil in a separate pan over medium heat. Add cumin seeds and toast until they sizzle, about 30 seconds.
Add chopped onions, garlic, and ginger. Sauté over medium heat for 3–4 minutes until onions are translucent. Add chopped tomatoes and cook, stirring, until softened, about 4 minutes.
Stir in turmeric, coriander, red chili powder, and salt. Cook for 1 minute to bloom spices.
Combine the cooked masoor dal (including any liquid) with the seasoned mixture. Simmer together over low heat for 10–15 minutes, stirring occasionally, until flavors meld and the consistency is thick but slightly soupy.
Adjust salt if needed. Turn off heat and garnish with chopped cilantro before serving.
