Guntur Idli is a soft, steamed South Indian rice cake made from fermented batter, naturally light and probiotic. This healthy vegetarian breakfast is low in calories, easy to digest, and a family morning staple.
Rinse rice and split urad dal separately in cold water until water runs clear, then soak both along with fenugreek seeds; soak rice in 2 cups and dal+fenugreek in 1 cup water for at least 4 hours.
Drain, reserving soaking water, then grind urad dal and fenugreek seeds together until fluffy, adding reserved water as needed for a smooth texture; grind rice to a slightly coarse consistency.
Combine both batters, mix thoroughly, and transfer to a large bowl; cover and ferment in a warm place (85°F) for 8–12 hours, until the batter doubles and bubbles appear.
Add salt to the fermented batter, gently stir to deflate as little as possible to preserve aeration.
Preheat idli steamer, then grease the idli molds lightly; pour batter into each mold up to three-fourths capacity. Steam over medium heat for 10–12 minutes, checking doneness by inserting a toothpick—if it comes out clean, idlis are ready. Cool for 2 minutes before unmolding and serving hot.
