Omega-3s reduce soreness, sweet potato restocks glycogen. This post workout salmon plate is recovery science on a dinner plate.
Preheat grill to medium-high heat (about 400°F) and brush grates with oil.
Place sweet potato chunks in a pot, cover with cold water, and bring to a boil; reduce to a gentle simmer and cook for 15 minutes until very tender.
While sweet potatoes cook, pat the salmon fillets dry, rub with 1 tbsp olive oil, and season both sides with half the salt, pepper, garlic powder, and paprika.
Grill the salmon skin-side down for 4 minutes without moving, then flip and grill an additional 2–3 minutes on the flesh side until just opaque and moist inside.
Drain the sweet potatoes, mash with 1 tbsp olive oil, milk, remaining salt and pepper, then fold in parsley. Taste and adjust seasoning as needed.
Plate mash first, top with grilled salmon, and garnish with extra parsley if desired. Serve immediately for optimal temperature and texture.
