Classic deviled eggs filled with a creamy mustard-paprika yolk mixture are a protein-rich, family gathering staple. This vegetarian appetizer is a potluck essential that disappears from the table first.
Place large eggs in a single layer in a medium saucepan and cover with cold water by 1 inch. Bring to a steady boil over medium-high heat, then immediately cover and remove from heat. Rest covered for 10–11 minutes.
Drain hot water and transfer eggs to a bowl of ice water. Cool fully for at least 5 minutes; this stops cooking and makes peeling easier.
Gently tap eggs to crack shells and peel under running water. Slice eggs in half lengthwise with a sharp knife, wiping the blade between cuts for clean edges.
Carefully pop out yolks into a bowl. Set whites on a serving plate. Mash yolks with a fork until fine and crumbly.
Add mayonnaise, Dijon mustard, white vinegar, kosher salt, and black pepper to the yolks. Mix until smooth and creamy. Taste and adjust seasoning if desired.
Spoon or pipe yolk mixture back into egg whites. Dust tops evenly with paprika just before serving.
