Pork simmered in a tangy miltomate (wild tomatillo) salsa, an ancient Mexican ingredient. This protein-rich family dish delivers a fresh, uniquely tart flavor from this heirloom fruit.
Heat 2 tbsp vegetable oil in a large Dutch oven over medium-high. Add pork cubes in a single layer and brown well on all sides, working in batches if necessary, about 6–8 minutes per batch. Transfer browned pork to a plate.
Lower heat to medium. Add sliced onion and jalapeño to the pot. Sauté, stirring and scraping up browned bits, until onions are translucent and softened, about 5 minutes.
Add miltomates and garlic cloves. Increase heat to medium-high and cook, stirring occasionally, until miltomates begin to break down and release liquid, 5–7 minutes.
Return browned pork and accumulated juices to pot. Sprinkle with salt and black pepper. Stir well to combine, then reduce heat to low and cover. Simmer gently for 1 hour 15 minutes, stirring occasionally, until pork is tender and the sauce is thick and flavorful.
Remove from heat, stir in chopped cilantro, and season to taste. Serve hot, spooning extra salsa over each portion.
