Jalisco's signature freshwater fish soup with vegetables in a savory tomato-chile broth. This healthy, protein-rich regional specialty brings lake-fresh flavors to the family table.
Soak the dried guajillo chiles in hot water for 15 minutes to soften. Meanwhile, prep all vegetables: slice corn into rounds and cut the rest into large chunks.
Blend soaked chiles, tomatoes, white onion, and garlic cloves until smooth, adding a cup of water to help blend. Strain the sauce for a silky broth.
In a large pot, heat 2 tbsp oil over medium. Pour in the chile-tomato sauce, add bay leaf, and sauté for 5 minutes, stirring to avoid sticking.
Add 10 cups of water and bring the mixture to a gentle boil. Stir in salt and black pepper; add potatoes, carrots, chayote, corn, and cook uncovered for 20 minutes over medium-high heat.
Add zucchini and tilapia fillets gently to the pot. Lower heat to medium and simmer 10–12 minutes, or until fish is opaque and vegetables are fork-tender but not mushy.
Turn off heat. Adjust seasoning, and stir in chopped cilantro. Ladle caldo into bowls and serve with fresh lime wedges.
