Squid tubes stuffed with breadcrumbs, herbs, and sometimes their own tentacles. This high protein mediterranean dish is a fresh, flavorful family dinner from Italy's coastal kitchens.
Preheat oven to 375°F. Rinse and pat dry the squid tubes and tentacles; finely chop the tentacles.
In a skillet, heat 1 tbsp olive oil over medium heat, sauté chopped tentacles and minced garlic for 2–3 minutes until fragrant, then cool slightly.
In a bowl, combine sautéed tentacles, breadcrumbs, parsley, lemon zest, salt, pepper, and the beaten egg. Mix thoroughly to moisten the stuffing.
Stuff each squid tube with the breadcrumb mixture, taking care not to overfill; seal open ends with toothpicks.
Arrange stuffed squid in a baking dish, drizzle with remaining olive oil, cover with foil, and bake for 20 minutes. Remove foil and bake an additional 8–10 minutes for tender squid and golden tops.
