Roast kid goat is an Easter staple across southern Italy and the islands. This high protein mediterranean family dish is a lean carnivore tradition with delicate, tender flavor.
Preheat your oven to 375°F. Pat the kid goat leg dry and rub with sea salt, black pepper, olive oil, and chopped rosemary to evenly coat the surface.
Peel and slice the Yukon gold potatoes and onion. Toss them with 1 tbsp olive oil, salt, and half the minced garlic for uniform seasoning.
Arrange the goat leg in a roasting pan, scatter potatoes and onions around, and tuck remaining garlic cloves under and on top of the meat for aromatic infusion.
Pour white wine over the meat and vegetables. Cover loosely with foil and roast for 45 minutes to trap moisture, then remove foil.
Increase oven heat to 425°F. Roast uncovered for another hour, basting the goat with pan juices every 20 minutes until golden, tender, and internal temp reaches 160°F. Let rest 10 minutes before slicing.
