Coconut Rice is a flavorful Indian rice dish with aromatic spices and a distinct regional character. This vegetarian preparation is a versatile family side dish that pairs well with curries and raita.
Rinse 1 cup of basmati rice thoroughly in cold water until the water runs clear, then soak for 20 minutes and drain well.
Heat 1 tbsp vegetable oil in a heavy-bottomed saucepan over medium heat. Add mustard seeds and cumin seeds; let them crackle for about 30 seconds.
Stir in sliced green chili and curry leaves. Sauté for about 1 minute until fragrant, being careful not to burn the spices.
Add the drained rice, and sauté gently for 1-2 minutes to coat the grains with seasoned oil.
Pour in 1 cup coconut milk, 1 cup water, and 0.75 tsp salt. Mix gently, bring to a simmer over medium-high heat, then reduce heat to low, cover with a tight-fitting lid, and cook undisturbed for 14-16 minutes until rice is tender.
Remove from heat and let the rice rest, covered, for 10 minutes to finish steaming. Fluff with a fork and gently fold in 0.25 cup grated coconut before serving.
