In a small bowl, sprinkle gelatin powder over 1/4 cup of cold water and let it bloom for 5 minutes.
In a saucepan, heat the remaining 1 3/4 cups water over medium heat until hot but not boiling (about 80°C/175°F).
Whisk in matcha powder until completely smooth, ensuring there are no lumps. Stir in granulated sugar until dissolved.
Remove saucepan from heat, add bloomed gelatin and stir constantly until the gelatin is completely dissolved (do not boil after adding gelatin).
Stir in honey and lemon juice. Strain the mixture through a fine mesh sieve to ensure smooth texture, then pour into molds or glasses.
Let cool to room temperature, cover, and refrigerate for at least 2 hours until fully set before serving.
