Sweet, aromatic, and deeply satisfying, Gur Rewri is a beloved Indian dessert with centuries of tradition. This family celebration staple adds sweetness to festivals, weddings, and everyday moments of joy.
Dry-roast the sesame seeds in a heavy-bottomed pan over medium heat, stirring constantly for 3–4 minutes, until lightly golden and aromatic. Remove from pan and set aside to cool.
Grease a large plate or tray lightly with 1 tbsp of ghee to prevent sticking; set aside for shaping later.
In the same pan, add the jaggery with 2 tbsp water. Heat gently on low-medium, stirring often, until the jaggery melts completely and begins bubbling (about 5 minutes).
Add cardamom powder to the jaggery syrup, and let it cook until it forms a soft, pliable ball when a drop is placed in cold water (soft ball stage, 230–235°F).
Reduce heat to low, quickly stir in roasted sesame seeds and 1 tbsp ghee. Mix thoroughly to coat every seed in syrup, working quickly as the mixture thickens.
Immediately remove from heat and, while still warm, pinch off small portions and shape them into bite-sized discs or balls with greased hands on the prepared plate.
Let the rewri cool at room temperature for at least 30 minutes. Once firm, store in an airtight container to preserve texture and freshness.
