Idiappam Curry is a lacy, bowl-shaped South Indian bread with crispy edges and a soft, spongy center. This naturally fermented vegetarian bread is light, healthy, and a family breakfast favorite in Kerala.
Sift 2 cups of rice flour with 0.75 tsp salt into a mixing bowl for even texture and taste distribution.
Bring 1.5 cups of water to a near boil, then add 1 tbsp vegetable oil. Pour the hot water gradually into the flour, stirring continuously with a wooden spoon to form a soft, lump-free dough.
When the temperature drops, knead the warm dough gently until smooth and pliable, covering the bowl with a damp cloth to retain moisture.
Grease idiappam molds or a sev press, then fill them with dough. Press the dough in spirals onto lightly oiled idli plates or small bowls.
Sprinkle a little shredded coconut over each portion, then steam the idiappams for 10–12 minutes over medium-high heat, until set but soft in the center and edges turn lightly crisp. Serve hot.
