Dry roast 1.5 cups of sesame seeds in a heavy pan over medium heat, stirring continuously until they turn light golden and begin to pop, about 4-5 minutes. Transfer to a plate to cool.
In the same pan, dry roast 0.5 cup of peanuts over medium-low heat, stirring constantly, until crunchy and aromatic, about 4 minutes. Cool and lightly crush or coarsely chop.
Grease a large flat tray or parchment-lined surface with 1 tsp ghee for easy demolding.
In a wide, thick-bottomed pan, melt 1 cup jaggery with 2 tbsp ghee over low heat. Stir continuously until jaggery is completely dissolved and foamy bubbles appear. To test, drop a little syrup in cold water — if it forms a brittle ball, the syrup is ready.
Immediately mix in roasted sesame seeds, peanuts, and 0.5 tsp cardamom powder. Working quickly and while the mixture is hot, spread it evenly over the greased tray with a rolling pin or spatula to achieve 1/4-inch thickness.
Score the surface with a sharp knife into rectangles or diamonds while still warm. Let cool completely at room temperature so the Gajak becomes crisp, then break along scored lines and serve.
